Chilled Cucumber Mint Soup

With summer solstice bringing in the long hot days of summer, I've been craving cooling meals that are nourishing and refreshing. Baked Avocado Fries + Lemon Garlic Aioli

I can't take credit for this amazing idea so I have to give a shot out to  Ginger Bear Kitchen  for inspiring me to get into the kitchen and make a gluten free version of this recipe. Avocados are honestly one of my favorite foods. Rarely does a day go by without me having one in a meal or as a snack. This fruit--yes it's a fruit and not a vegetable-- is low in sugar and a good source of  potassium, folic acid, vitamin E and master antioxidant glutathione. I love these little green gems and am a fan of this clever baked avocado recipe. Who doesn't love a tasty dip-able snack? Which reminds me...be sure that the avocado is not overly ripe so the inside doesn't seem mushy. Let's get to the good stuff, shall we?
