Apple-Berry Porridge


I can't take credit for this recipe, but it's so yummy I have to share it. I was in preparation for leading a cleanse and came across this last year in Adina Niemerow's book, Super Cleanse. Adina is a bay area holistic chef and her roster of experience includes The French Laundry, Tree of Life Rejuvenation Center as well as being a holistic chef to Donna Karen, Ben Stiller and the late Steve Jobs to name a few. Her recipes are clean, simple and tasty. Just the way I like it. This "porridge" is incredibly delicious with just the right textures. For me, it makes for a perfect mid-morning or late afternoon snack. I drizzled a little warm coconut oil on top as I put coconut oil on everything. This recipe is for 2 servings, but I am pretty certain I finished it in 1... and then made more. :) Enjoy.

Ingredients:
1 large apple, peeled, chopped and diced
1 cup of berries of your choice- I used blueberries
1/4 cup of pumpkin seeds, soaked overnight
Pinch of Himalayan or Celtic sea salt
Garnish: 1 Tablespoon flaxseeds, ground in a coffee grinder
2 dried figs or prunes, chopped

Instructions:
1. Blend the apple, berries, soaked pumpkin seeds and salt in a food processor, Vitamix or high speed blender.
2. Pour mixture into a bowl and garnish with ground flaxseeds and prunes.
